From here we can confirm a few things:
1.) It's the booze itself that explodes and not the barrels.
2.) The barrels become mangled after the explosion, but do not disappear. They also do not catch on fire.
3.) Dwarves near the barrels either die or catch on fire. some are unaffected.

If you look at a barrel while it's exploding it will say something like 'boiling dwarven ale'.
