Yes, correct. All the visible demons had been either trapped in cages or killed by the collapse. There were likely more left undetected in the hallway and pits outside of the unveiling dust cloud.

The water did nothing but evaporate almost instantaneously and without producing much steam. I was disappointed.

Sorry Gumby, it's been a long time since I stopped by here as I haven't been playing DF for a while (awaiting the next version). The 1st lever raised the drawbridge situated on the tiles just above the shared animal cage (you'll see it change just before the first door is destroyed). It's important you use a drawbridge to contain the demons in the trap room as they'll break through anything else (other than a constructed wall but good luck timing that). The 2nd lever released the commando puppies and kittens to lure the demons further into the room. If you don't have bait the demons tend to stop as soon as there is no path available to something they can hurt, ie once you raise the drawbridge. The 3rd lever was meant to raise the second drawbridge that was just after the line of destroyed doors so that the demons would be completely contained before the ceiling drop. It failed to work (probably because demons were standing on it) and I wasted some movie time waiting for it to raise. Once I realized it wasn't going to work I flicked the red lever and you know what that one did.

The picture on that shield is actually that hammerdwarf himself striking down the adamantine queen after she went berserk (I forgot to mark show history when I changed the init to make the display smaller for this movie). I really like that shield.

Truthfully, I hadn't thought that far ahead. First it was important to ascertain whether they could be captured. With that proven we can now all bend our minds to practical uses for them, even if it is just a zoo that will eventually doom your fortress. I have some more HFS experiments in mind and if there's anything interesting I'll post more videos.
